A Strawberry & Chicken Spinach Roll Up is the perfect cool, easy and delicious meal for summer. The kids are out of school, which means life just got busier. There is more free time as a family – whether that means traveling, or staying home and catching up on yard work. Instead of doing a lot of cooking at the stove or eating out, try having a picnic. You don’t have to travel to have one. Take a break from all the yard work and serve a picnic outside. It will add a bit of fun to an otherwise hardworking day.
There are so many delicious picnic foods. The traditional food contains fried chicken, Cole Slaw and/or potato salad, baked beans and some delicious rolls. Oh. And don’t forget the Chocolate Cake. But you don’t have to bake all of that. Just a simple sandwich, some chips and fruit make a perfect cool meal. One of my simple go-to sandwiches is a roll up. With a flour tortilla as the base, the sky is the limit. My favorite roll up is this Strawberry and Spinach Chicken Roll Up. It is cool, healthy and so delicious!
Spinach Chicken Roll Up
Ingredients:
1 Flour Tortilla
1 handful fresh Spinach leaves (or the leafy green of your choice)
Cubed or sliced Chicken
2 large fresh Strawberries, sliced
Feta Cheese crumbles
Raspberry Walnut Vinaigrette Dressings
Directions:
Spread spinach on the flour tortilla. Top with chicken and sliced strawberries. Sprinkle with Feta Cheese crumbles to taste. Pour on as much or as little dressing as preferred. Roll tortilla around ingredients. Eat and enjoy!
There are endless ingredients you can add to your roll up. I also enjoy a chicken salad roll up with iceberg lettuce and grapes, or just a fruit roll up. Spread your tortilla with a thin layer of cream cheese and add your favorite sliced fruits.
Keep in mind that you can do a personal picnic as well. Just pack your picnic basket with a roll up, a few chips, an extra strawberry or two a glass of lemonade, and a good book. It’s a perfect way to take a break and enjoy a beautiful summer day!
Here’s a Bonus Tip:
Go ahead and pour you a glass of lemonade in a Mason Jar, and screw on the lid. It’s a perfect single serving size. Take it a step further and purchase the lids that are made for straws. Place a piece of masking tape over the hole for traveling. Then remove it, insert the straw and start drinking!
