Corn Salad -Super Simple with a Surprisingly Crunchy Twist

Corn Salad is one of the most versatile salads ever. It is a perfect side dish for a barbecue. Add it to the menu for a Salad Buffet get together with friends.

The Farm Wife in the Kitchen Cookbook

Corn Salad


  • 2 cans (or two heaping cups) Whole Kernel Corn
  • 1 can Green Chilies
  • 1 heaping cup Grated Cheddar Cheese
  • Mayonnaise to moisten
  • Approximately 1 to 2 cups crushed Frito Corn Chips


Mix the corn, green chilies, cheese and mayonnaise together until well blended.  Refrigerate until ready to serve.  Right before serving, stir in the Frito Corn Chips.

Really, now.  Can it get any easier than this? Just don’t try to add the Fritos too early.  You want that crunch they have, and adding them too early will make them soft.
