Amy’s Cookies

 

 

When I want something sweet and tasty, I mix up a batch of Amy’s Cookies.  I don’t know who Amy is, or who to give credit for the recipe, but I do know they are delicious! The main ingredient is a bit different, but I promise it will turn out to be a scrumptious treat!

Amy’s Cookies are similar in taste and texture to an oatmeal cookie.  By using Grape Nut Flakes, there is a hint of a nutty flavor without adding nuts. My Mom made these one day when my son was visiting her, and they quickly became one of his favorites.

Don’t mistake Grape Nuts for the Grape Nut Flakes.  They are two different things altogether, and the cookies will not come out the same.

 

Sift Together and set aside:

1 cup Flour
1/2 teaspoon Baking Soda
1/4 teaspoon Baking Powder
1/2 teaspoon salt

 

Cream Together:

½ cup Shortening
½ cup Granulated Sugar
1 cup Brown Sugar

 

Into the shortening mixture, stir in:

1 egg, lightly beaten
1 teaspoon Vanilla
1 cup Grape Nuts Flakes (not Grape Nuts, but the Flakes!)
1 cup Oatmeal

 

Stir in the flour mixture until incorporated. In approximately 1 Tablespoon of dough per cookie, place on a greased cookie sheet. Bake at 350 degrees for 8 to 10 minutes.

Yield: Approximately 60 cookies. That is, IF you can keep everyone from snitching ‘samples’!
